Delicious white chocolate raspberry cheesecake bars with a creamy texture.

- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a greased 9×9 inch baking pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs and vanilla, mix well.
- Fold in white chocolate chips and raspberries.
- Pour the cream cheese mixture over the crust.
- Bake for 30-35 minutes or until set.
- Let it cool, then refrigerate for at least 2 hours before cutting.
Notes
- Store leftovers in an airtight container in the fridge.
- Can substitute frozen raspberries if fresh are not available.
- For a richer flavor, add a pinch of salt to the cream cheese mixture.
