Homemade turkey stock for soups and sauces.
Ingredients

- 2 turkey carcasses
- 10 cups water
- 2 onions, quartered
- 4 carrots, chopped
- 4 celery stalks, chopped
- 4 cloves garlic, crushed
- 1 bay leaf
- 1 teaspoon black peppercorns
- Salt to taste
Instructions
- Place turkey carcasses in a large pot.
- Add water, onions, carrots, celery, garlic, bay leaf, and peppercorns.
- Bring to a boil over medium heat.
- Reduce heat and simmer for 4-6 hours.
- Skim off any foam that rises to the surface.
- Strain the stock through a fine mesh sieve.
- Discard solids and cool the stock.
- Store in airtight containers in the fridge or freezer.
Notes
- Use leftover turkey bones for flavor.
- Feel free to add herbs like thyme or parsley.
- Stock can be used in various recipes.
