This is the best Jamaican brown stew chicken recipe. It features tender chicken cooked in a rich, flavorful sauce.
Ingredients

- 2 lbs chicken, cut into pieces
- 2 tablespoons soy sauce
- 1 tablespoon browning sauce
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 sprigs thyme
- 1 bell pepper, sliced
- 2 carrots, sliced
- 2 cups chicken broth
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Marinate the chicken with soy sauce, browning sauce, garlic, ginger, thyme, and pepper for at least 1 hour.
- Heat oil in a large pot over medium heat.
- Add the marinated chicken and brown on all sides.
- Remove chicken and set aside.
- Add onion, bell pepper, and carrots to the pot and sauté until softened.
- Return chicken to the pot and pour in chicken broth.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Adjust seasoning with salt and pepper.
