A flavorful dish of noodles with a rich peanut sauce.
Ingredients

- 8 oz rice noodles
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp lime juice
- 2 tbsp honey
- 1 tsp garlic, minced
- 1/2 tsp ginger, grated
- 1/4 cup water
- 1 cup bell peppers, sliced
- 1/2 cup carrots, julienned
- 1/4 cup green onions, chopped
- 1/4 cup crushed peanuts for garnish
Instructions
- Cook the rice noodles according to package instructions.
- In a bowl, mix peanut butter, soy sauce, lime juice, honey, garlic, ginger, and water.
- Heat a pan over medium heat and add sliced bell peppers and carrots. Stir-fry for 5 minutes.
- Add cooked noodles and peanut sauce to the pan. Toss well to combine.
- Serve in bowls and garnish with green onions and crushed peanuts.
Notes
- Adjust the spice level by adding chili flakes if desired.
- Feel free to add cooked chicken or tofu for extra protein.
- This dish can be served warm or cold.
