Description

Ingredients

  • 8 oz rice noodles
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp lime juice
  • 2 tbsp honey
  • 1 tsp garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 cup water
  • 1 cup bell peppers, sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, chopped
  • 1/4 cup crushed peanuts for garnish

Instructions

  1. Cook the rice noodles according to package instructions.
  2. In a bowl, mix peanut butter, soy sauce, lime juice, honey, garlic, ginger, and water.
  3. Heat a pan over medium heat and add sliced bell peppers and carrots. Stir-fry for 5 minutes.
  4. Add cooked noodles and peanut sauce to the pan. Toss well to combine.
  5. Serve in bowls and garnish with green onions and crushed peanuts.

Notes

  • Adjust the spice level by adding chili flakes if desired.
  • Feel free to add cooked chicken or tofu for extra protein.
