A delicious and hearty stuffed pepper casserole that combines rice, ground meat, and peppers.

- 1 lb ground beef
- 1 cup cooked rice
- 4 bell peppers, chopped
- 1 can diced tomatoes
- 1 cup shredded cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F.
- In a skillet, brown the ground beef with onion and garlic.
- Add the cooked rice, chopped peppers, diced tomatoes, and seasonings.
- Mix well and transfer to a baking dish.
- Top with shredded cheese.
- Bake for 30 minutes until heated through and cheese is melted.
Notes
- Feel free to use any ground meat.
- You can add more vegetables if desired.
- Store leftovers in the refrigerator for up to 3 days.
