Description

Delicious Spinach and Cheese Quesadillas filled with gooey cheese and fresh spinach.


Ingredients

  • 2 cups fresh spinach
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add fresh spinach and sauté until wilted.
  3. In a bowl, mix sautéed spinach, cheese, garlic powder, salt, and pepper.
  4. Place a tortilla in the skillet, add the spinach and cheese mixture, and top with another tortilla.
  5. Cook for 3-4 minutes on each side until golden brown and cheese is melted.
  6. Remove from skillet, slice, and serve warm.
