Delicious Spinach and Cheese Quesadillas filled with gooey cheese and fresh spinach.
Ingredients

- 2 cups fresh spinach
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 flour tortillas
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add fresh spinach and sauté until wilted.
- In a bowl, mix sautéed spinach, cheese, garlic powder, salt, and pepper.
- Place a tortilla in the skillet, add the spinach and cheese mixture, and top with another tortilla.
- Cook for 3-4 minutes on each side until golden brown and cheese is melted.
- Remove from skillet, slice, and serve warm.
Notes
- Use whole wheat tortillas for a healthier option.
- Add cooked chicken or beans for extra protein.
- Serve with salsa or sour cream.
