Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 lemon (juiced)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Place the chicken breast-side down on a cutting board.
  3. Use kitchen shears to cut along both sides of the backbone and remove it.
  4. Flip the chicken over and press down on the breast to flatten it.
  5. Drizzle olive oil over the chicken and rub in the spices.
  6. Place the chicken on a baking sheet, breast-side up.
  7. Roast in the oven for 45-55 minutes or until the internal temperature reaches 165°F (74°C).
  8. Let it rest for 10 minutes before carving.
