A hearty southern five layer beef casserole packed with flavor and comfort.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 3 cups tortilla chips
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add black beans, corn, salsa, chili powder, cumin, salt, and pepper to the beef. Stir well.
  4. In a baking dish, layer half of the tortilla chips at the bottom.
  5. Spread half of the beef mixture over the chips.
  6. Sprinkle with one cup of cheddar cheese.
  7. Repeat the layers with the remaining chips, beef mixture, and cheese.
  8. Bake in the oven for 20-25 minutes until the cheese is bubbly.
  9. Let it cool for a few minutes before serving.

Notes

  • You can add jalapeños for extra heat.
  • Serve with sour cream and guacamole.
