Description
Salad Lyonnaise is a classic French salad featuring frisée lettuce, crispy bacon, and poached eggs.
Ingredients

- 4 cups frisée lettuce
- 4 slices of bacon
- 2 eggs
- 1 tablespoon Dijon mustard
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the bacon in a skillet until crispy. Remove and drain on paper towels.
- In a bowl, whisk together Dijon mustard, red wine vinegar, olive oil, salt, and pepper.
- In the same skillet, add frisée and toss with the dressing.
- Poach the eggs in simmering water for about 3 minutes.
- Divide the dressed frisée onto plates, top with bacon and a poached egg.
- Serve immediately.

- Use fresh frisée for the best flavor.
- Adjust the amount of bacon to your preference.
