Description

Salad Lyonnaise is a classic French salad featuring frisée lettuce, crispy bacon, and poached eggs.


Ingredients

  • 4 cups frisée lettuce
  • 4 slices of bacon
  • 2 eggs
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet until crispy. Remove and drain on paper towels.
  2. In a bowl, whisk together Dijon mustard, red wine vinegar, olive oil, salt, and pepper.
  3. In the same skillet, add frisée and toss with the dressing.
