Ingredients

- 2 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine zucchini, tomatoes, garlic, olive oil, salt, and pepper.
- Spread the mixture onto a baking sheet.
- Sprinkle parmesan cheese on top.
- Roast for 20-25 minutes, until vegetables are tender.
- Serve warm.
