- 1 pound chicken breast, diced
- 1 cup pineapple chunks
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add chicken and cook until no longer pink.
- Stir in onions, garlic, and ginger; cook until softened.
- Add bell pepper and pineapple; cook for 3-4 minutes.
- Pour in soy sauce and mix well.
- Stir in cooked rice and heat through.
- Season with salt and pepper to taste.
- Serve hot.
