Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 cup mashed potatoes
  • 1 cup cheese (cheddar or farmer’s)
  • 1 onion, finely chopped
  • 2 tablespoons butter

Instructions

  1. In a bowl, mix flour and salt.
  2. Add egg and water. Knead until smooth.
  3. Let the dough rest for 30 minutes.
  4. In a skillet, sauté onion in butter until golden.
  5. Mix mashed potatoes, cheese, and onion.
  6. Roll out dough and cut into circles.
  7. Place filling on each circle and fold.
  8. Boil pierogi in salted water until they float.
  9. Serve with sour cream or butter.

Notes

  • Use different fillings like sauerkraut or meat.
  • Freeze uncooked pierogi for later use.
