Pecan upside down cake is a delicious dessert featuring a caramelized pecan topping.

- 1 cup pecans
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter and brown sugar in a pan, then pour into a cake pan.
- Arrange pecans over the sugar mixture.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, beat eggs and sugars until fluffy.
- Add vanilla and milk to the egg mixture.
- Combine both mixtures until smooth.
- Pour batter over pecans.
- Bake for 30-35 minutes.
- Let cool, then invert the cake onto a plate.
