Parmesan Herb Roasted Potatoes are crispy, flavorful, and easy to make. Perfect as a side dish.

- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine olive oil, garlic powder, thyme, rosemary, salt, and pepper.
- Add the potatoes to the bowl and toss until well coated.
- Spread the potatoes evenly on a baking sheet.
- Sprinkle Parmesan cheese on top of the potatoes.
- Bake for 25-30 minutes, or until golden brown and crispy.
- Remove from oven and serve warm.
Notes
- For extra crispiness, broil for 2-3 minutes at the end.
- Feel free to add your favorite herbs.
