Crispy Parmesan crusted zucchini chips that are easy to make.

- 2 medium zucchinis, sliced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- Cooking spray
Instructions
- Preheat your oven to 425°F (220°C).
- Mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper in a bowl.
- Dip each zucchini slice in the beaten eggs, then coat with the breadcrumb mixture.
- Place the coated zucchini on a baking sheet lined with parchment paper.
- Spray the zucchini chips lightly with cooking spray.
- Bake for 20-25 minutes until golden brown and crispy.
- Serve immediately.
Notes
- For extra flavor, add Italian seasoning to the breadcrumb mixture.
- Store leftovers in an airtight container for up to 3 days.
