Description

Ingredients

  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 2 cups beef or vegetable broth
  • 1 cup shredded cheese
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat.
  2. Add the taco seasoning and stir for 1 minute.
  3. Add the rice, black beans, corn, diced tomatoes, and broth.
  4. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 20 minutes or until rice is cooked.
