Ingredients

- 1 lb chicken, diced
- 1 lb sausage, sliced
- 1 cup shrimp, peeled
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 cups rice
- 2 tsp Cajun seasoning
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, bell pepper, and garlic until soft.
- Add chicken and sausage; cook until browned.
- Stir in rice and Cajun seasoning.
- Add chicken broth and tomatoes; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add shrimp and cook for an additional 5-10 minutes.
- Season with salt and pepper before serving.
