Ingredients

  • 1 cup Arborio rice
  • 2 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and sliced mushrooms; cook until mushrooms are soft.
  4. Stir in Arborio rice and cook for 2 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20 minutes, stirring occasionally.
  7. Once rice is cooked, stir in heavy cream.
  8. Season with salt and pepper.
  9. Garnish with fresh parsley before serving.

Notes

  • Adjust the consistency by adding more broth if needed.
