A creamy and comforting one-pot dish featuring mushrooms and rice.
Ingredients

- 1 cup Arborio rice
- 2 cups vegetable broth
- 1 cup sliced mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and sauté until translucent.
- Add minced garlic and sliced mushrooms; cook until mushrooms are soft.
- Stir in Arborio rice and cook for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Once rice is cooked, stir in heavy cream.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Adjust the consistency by adding more broth if needed.
- Use any type of mushrooms you prefer.
- Can be made vegan by substituting cream with coconut milk.
