Description

Ingredients

  • 2 cups long-grain rice
  • 4 chicken thighs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup peas (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion and garlic to the pot, sauté until soft.
  5. Add rice and stir for 2 minutes.
  6. Pour in chicken broth, paprika, salt, and pepper.
  7. Return chicken to the pot and bring to a boil.
  8. Cover and reduce heat, simmer for 20 minutes.
  9. Add peas and cook for an additional 5 minutes.
