- 2 salmon fillets
- 1 cup rice
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1/2 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a pot, heat olive oil and sauté garlic until fragrant.
- Add rice and stir for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 18-20 minutes.
- While rice cooks, season salmon with salt, pepper, and oregano.
- Place salmon on a baking sheet and bake for 12-15 minutes.
- Once rice is done, fluff with a fork and mix in tomatoes, olives, and feta.
- Serve salmon over the rice mixture.
