Description

Crispy potato skins topped with cheese, bacon, and green onions.


Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes.
  3. Pierce the potatoes with a fork and rub them with olive oil, salt, and pepper.
  4. Bake the potatoes for 45 minutes or until tender.
  5. Let the potatoes cool slightly, then cut them in half and scoop out some flesh.
  6. Brush the insides with olive oil and season with salt and pepper.
  7. Return the potato halves to the oven and bake for another 10 minutes until crispy.
  8. Remove from the oven and fill each skin with cheese, bacon, and green onions.
  9. Bake for an additional 5 minutes until the cheese is melted.
  10. Serve with sour cream on the side.

Notes

  • For extra flavor, add jalapeños or avocado.
  • Store leftovers in an airtight container in the fridge.
