Crispy potato skins topped with cheese, bacon, and green onions.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sliced green onions
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the potatoes.
- Pierce the potatoes with a fork and rub them with olive oil, salt, and pepper.
- Bake the potatoes for 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out some flesh.
- Brush the insides with olive oil and season with salt and pepper.
- Return the potato halves to the oven and bake for another 10 minutes until crispy.
- Remove from the oven and fill each skin with cheese, bacon, and green onions.
- Bake for an additional 5 minutes until the cheese is melted.
- Serve with sour cream on the side.
Notes
- For extra flavor, add jalapeños or avocado.
- Store leftovers in an airtight container in the fridge.
- Reheat in the oven for best results.
