A creamy and cheesy casserole with baked potatoes, bacon, and green onions.
Ingredients

- 4 large russet potatoes, peeled and cubed
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the cubed potatoes in salted water until tender, about 10-15 minutes.
- Drain the potatoes and return them to the pot.
- Add sour cream, cheddar cheese, bacon, green onions, garlic powder, salt, and pepper.
- Mix until well combined.
- Transfer the mixture to a greased baking dish.
- Bake for 25-30 minutes until heated through and cheese is melted.
Notes
- Top with extra cheese before baking for a cheesier dish.
- Can be made ahead of time and stored in the refrigerator.
- Reheat in the oven before serving.
