Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper.

- Spread the potatoes on a baking sheet in a single layer.
- Roast for 30-40 minutes or until golden and tender, flipping halfway through.
