Description

Jambalaya is a flavorful, spicy dish from Louisiana, combining rice, meat, and vegetables.


Ingredients

  • 1 pound chicken, diced
  • 1 pound shrimp, peeled and deveined
  • 1 pound andouille sausage, sliced
  • 2 cups long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage, cooking until browned.
  3. Stir in onion, bell pepper, celery, and garlic. Cook until softened.
  4. Add tomatoes, rice, broth, Cajun seasoning, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and cover. Simmer for 20-25 minutes.
  6. Add shrimp in the last 5 minutes of cooking.
  7. Remove from heat and let sit for 5 minutes before serving.
