- 1 pound chicken, diced
- 1 pound shrimp, peeled and deveined
- 1 pound andouille sausage, sliced
- 2 cups long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage, cooking until browned.
- Stir in onion, bell pepper, celery, and garlic. Cook until softened.
- Add tomatoes, rice, broth, Cajun seasoning, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and cover. Simmer for 20-25 minutes.
- Add shrimp in the last 5 minutes of cooking.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Adjust spice level to your preference.
- Use any combination of meats you like.
- Serve with hot sauce for extra heat.
