A quick and easy recipe for meatloaf made in an Instant Pot.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup ketchup
- 1 egg
- 1 small onion, chopped
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup shredded cheese (optional)
Instructions
- In a bowl, combine ground beef, breadcrumbs, milk, ketchup, egg, onion, garlic powder, salt, and pepper.
- Mix until well combined.
- Form the mixture into a loaf shape.
- Place the meatloaf on a trivet in the Instant Pot.
- Add 1 cup of water to the pot.
- Close the lid and set to high pressure for 30 minutes.
- Once done, release the pressure and carefully remove the meatloaf.
- Optional: Brush additional ketchup on top and broil for 5 minutes.
Notes
- Let the meatloaf rest for 10 minutes before slicing.
- You can add vegetables to the meat mixture if desired.
- Store leftovers in the refrigerator for up to 3 days.
