- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup corn, drained
- 1 cup black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 2 cups cooked rice
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add onion, bell pepper, and garlic. Cook until vegetables are soft.
- Stir in taco seasoning, corn, black beans, and diced tomatoes.
- Simmer for 5 minutes until heated through.
- Add cooked rice and mix well.
- Top with shredded cheese and cover until cheese melts.
- Serve hot and enjoy.
