A flavorful Greek egg casserole with feta, olives, and spinach.
Ingredients

- 6 large eggs
- 1 cup milk
- 1 cup crumbled feta cheese
- 1/2 cup pitted olives, sliced
- 2 cups fresh spinach, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add spinach and cook until wilted. Remove from heat.
- In a bowl, whisk together eggs and milk. Season with salt and pepper.
- Stir in feta cheese, olives, and the spinach mixture.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the eggs are set.
- Let it cool slightly before serving.
Notes
- Serve warm or at room temperature.
- This casserole can be made ahead and reheated.
- Feel free to add other vegetables like bell peppers or tomatoes.
