Ingredients

- 4 chicken breasts
- 2 lemons, juiced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 cup long-grain rice
- 2 tablespoons parsley, chopped
Instructions
- Marinate chicken in lemon juice, garlic, olive oil, oregano, salt, and pepper for at least 30 minutes.
- Heat a skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until cooked through.
- In a separate pot, bring chicken broth to a boil.
- Add rice to the boiling broth, reduce heat, and cover. Cook for 15 minutes until rice is tender.
- Fluff rice with a fork, then stir in lemon zest and parsley.
- Serve chicken over the lemon rice.

- Use fresh herbs for better flavor.
