Description

Crispy poblano chicken tacos topped with spicy avocado jalapeno salsa.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup poblano peppers, roasted and sliced
  • 8 corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup avocado, mashed
  • 1 jalapeno, minced
  • 1 lime, juiced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Warm tortillas in a skillet until soft.
  3. In a bowl, mix shredded chicken with poblano peppers, salt, and pepper.
  4. Fill each tortilla with the chicken mixture.
  5. Place tacos on a baking sheet and bake for 10 minutes until crispy.
  6. In another bowl, combine avocado, jalapeno, lime juice, salt, and pepper.
  7. Top tacos with lettuce, tomatoes, and avocado jalapeno salsa.
