Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper.
  3. Cook chicken for 6-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken and set aside.
  5. In the same skillet, add garlic and cook until fragrant.
  6. Add sun-dried tomatoes and cook for 2 minutes.
  7. Pour in chicken broth and bring to a simmer.
  8. Add heavy cream and Italian seasoning, stirring to combine.
  9. Add spinach and cook until wilted.
  10. Return chicken to the skillet and coat with sauce.
  11. Simmer for 5 minutes to heat through.
