A refreshing salad featuring chicken, cranberries, pecans, and a sweet poppy seed dressing.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup dried cranberries
- 1 cup pecans, chopped
- 6 cups mixed greens
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons apple cider vinegar
- 2 tablespoons poppy seeds
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded chicken, cranberries, and pecans.
- In a separate bowl, mix mayonnaise, Greek yogurt, apple cider vinegar, poppy seeds, and honey.
- Season dressing with salt and pepper.
- Pour dressing over the chicken mixture and toss to coat.
- Serve on a bed of mixed greens.
Notes
- Substitute walnuts for pecans if desired.
- Use leftover chicken for quicker preparation.
- This salad can be made a day in advance.
