A light and flavorful dish made with couscous, pine nuts, and parsley.
Ingredients

- 1 cup couscous
- 1/4 cup pine nuts
- 1/2 cup fresh parsley, chopped
- 2 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Toast the pine nuts in a skillet over medium heat until golden.
- In a saucepan, bring vegetable broth to a boil.
- Add couscous to the boiling broth and remove from heat.
- Cover and let it sit for 5 minutes.
- Fluff the couscous with a fork.
- Stir in olive oil, toasted pine nuts, and parsley.
- Add salt to taste and serve.
Notes
- Store leftovers in the refrigerator.
- Can be served warm or cold.
- Add lemon juice for extra flavor.
