Description
Colcannon potatoes are a traditional Irish dish made with mashed potatoes and leafy greens.
Ingredients
Scale
- 4 large potatoes
- 2 cups kale or cabbage, chopped
- 1/2 cup milk
- 1/4 cup butter
- Salt to taste
- Pepper to taste
Instructions
- Peel and chop the potatoes.
- Boil the potatoes in salted water until tender.
- In another pot, sauté the greens in butter until tender.
- Drain the potatoes and mash them.
- Add the milk and butter to the mashed potatoes.
- Mix in the sautéed greens.
- Season with salt and pepper.
- Serve hot.
Notes
- Use any leafy green of your choice.
- Adjust the milk for desired creaminess.
- Colcannon can be topped with additional butter.
