This coffee cake muffins recipe combines the flavors of coffee cake in a convenient muffin form.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1 tablespoon cinnamon
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and granulated sugar.
- Add eggs and vanilla, mix until smooth.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- In a separate bowl, mix brown sugar, cinnamon, and walnuts.
- Fill muffin cups halfway with batter, add a layer of the brown sugar mixture, and top with remaining batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store muffins in an airtight container for up to 3 days.
- Feel free to substitute nuts with chocolate chips.
- These muffins freeze well for up to 2 months.
