- 2 cups elbow macaroni
- 4 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1 tablespoon mustard
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and let cool.
- In a large bowl, combine chopped hard-boiled eggs, mayonnaise, mustard, celery, red onion, and pickle relish.
- Add the cooled macaroni to the bowl and mix well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For extra flavor, add diced bell peppers or olives.
- This salad can be made a day in advance.
