Delicious carrot banana bread that combines the sweetness of ripe bananas with the earthiness of carrots.
Ingredients

- 2 ripe bananas
- 1 cup grated carrots
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the bananas.
- Add grated carrots, sugar, brown sugar, vegetable oil, eggs, and vanilla. Mix well.
- In another bowl, combine flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- If using, fold in walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- This bread can be stored in an airtight container for up to a week.
- It freezes well; wrap it tightly and store in the freezer.
- Adjust the sweetness by varying the sugar amount.
