A delicious and easy breakfast quesadilla casserole perfect for mornings.

- 6 large flour tortillas
- 8 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled sausage
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Sauté bell peppers and onions until soft.
- Add cooked sausage to the skillet and mix well.
- Layer tortillas in a greased baking dish.
- Spread the sausage mixture over the tortillas.
- Pour the egg mixture over the top.
- Sprinkle with cheddar cheese.
- Bake in the preheated oven for 30-35 minutes, or until the eggs are set.
- Let cool for a few minutes, then slice and serve.
Notes
- Feel free to add your favorite vegetables.
- This dish can be made ahead and stored in the fridge.
- Reheat leftovers in the microwave.
