Ingredients

  • 6 large flour tortillas
  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled sausage
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, milk, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat. Sauté bell peppers and onions until soft.
  4. Add cooked sausage to the skillet and mix well.
  5. Layer tortillas in a greased baking dish.
  6. Spread the sausage mixture over the tortillas.
  7. Pour the egg mixture over the top.
  8. Sprinkle with cheddar cheese.
  9. Bake in the preheated oven for 30-35 minutes, or until the eggs are set.
  10. Let cool for a few minutes, then slice and serve.
