A hearty breakfast burrito casserole that’s easy to prepare and perfect for feeding a crowd.
Ingredients

- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 cup cooked sausage
- 1 can black beans, drained and rinsed
- 1 cup diced bell peppers
- 1 cup diced onions
- 8 small tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- Add cheese, sausage, black beans, bell peppers, onions, cumin, chili powder, salt, and pepper. Mix well.
- Cut tortillas into strips and layer half in a greased casserole dish.
- Pour half of the egg mixture over the tortillas.
- Layer the remaining tortilla strips and pour the rest of the egg mixture on top.
- Bake for 30-35 minutes or until set and golden.
- Let cool for a few minutes before serving.
Notes
- Feel free to add your favorite veggies.
- This casserole can be made ahead of time and stored in the refrigerator.
- Reheat leftovers in the microwave.
