Description

A hearty breakfast burrito casserole that’s easy to prepare and perfect for feeding a crowd.


Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 1 cup cooked sausage
  • 1 can black beans, drained and rinsed
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 8 small tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs and milk.
  3. Add cheese, sausage, black beans, bell peppers, onions, cumin, chili powder, salt, and pepper. Mix well.
  4. Cut tortillas into strips and layer half in a greased casserole dish.
  5. Pour half of the egg mixture over the tortillas.
  6. Layer the remaining tortilla strips and pour the rest of the egg mixture on top.
  7. Bake for 30-35 minutes or until set and golden.
  8. Let cool for a few minutes before serving.

Notes

  • Feel free to add your favorite veggies.
  • This casserole can be made ahead of time and stored in the refrigerator.
  • Reheat leftovers in the microwave.
