A simple and hearty dish featuring beef and vegetables cooked with rice.
Ingredients

- 1 pound ground beef
- 1 cup rice
- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic. Sauté until onion is translucent.
- Add ground beef. Cook until browned.
- Stir in mixed vegetables and cook for 5 minutes.
- Add rice, vegetable broth, salt, pepper, and paprika.
- Bring to a boil, reduce heat, and cover.
- Simmer for 20 minutes or until rice is cooked.
- Fluff with a fork and serve hot.
Notes
- Use any leftover vegetables you have.
- Adjust seasoning to taste.
- This dish can be made in advance and reheated.
