Description

A simple and hearty dish featuring beef and vegetables cooked with rice.


Ingredients

  • 1 pound ground beef
  • 1 cup rice
  • 2 cups vegetable broth
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic. Sauté until onion is translucent.
  3. Add ground beef. Cook until browned.
  4. Stir in mixed vegetables and cook for 5 minutes.
  5. Add rice, vegetable broth, salt, pepper, and paprika.
  6. Bring to a boil, reduce heat, and cover.
  7. Simmer for 20 minutes or until rice is cooked.
  8. Fluff with a fork and serve hot.
