- 1 packet taco seasoning
- 2 cups cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheese
- 1 avocado, sliced
- Sour cream for serving
Instructions
- Cook the ground beef in a skillet over medium heat until browned.
- Add taco seasoning and water as per packet instructions. Simmer for 5 minutes.
- Prepare the rice according to package instructions.
- In bowls, layer rice, black beans, corn, diced tomatoes, and seasoned beef.
- Top with lettuce, cheese, avocado, and sour cream.
