Description

A delicious Vietnamese-inspired rice bowl topped with fresh ingredients and flavorful sauces.


Ingredients

  • 1 cup jasmine rice
  • 1 cup water
  • 1 cup cooked chicken, shredded
  • 1/2 cup pickled carrots
  • 1/2 cup cucumber, sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sriracha
  • 1 tablespoon lime juice

Instructions

  1. Rinse the jasmine rice under cold water.
  2. Combine rice and water in a pot and bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let sit for 5 minutes.
  5. In a bowl, mix soy sauce, fish sauce, sriracha, and lime juice.
  6. Fluff the rice with a fork and layer it in a serving bowl.
  7. Add shredded chicken on top of the rice.
  8. Top with pickled carrots, cucumber, and cilantro.
  9. Drizzle the sauce mixture over the bowl.
  10. Serve immediately.

Notes

  • Adjust the spice level by adding more or less sriracha.
  • You can use tofu or pork instead of chicken.
  • For a vegan option, skip the fish sauce.
