- 4 large eggs
- 1 cup ricotta cheese
- 1 cup grated Parmesan cheese
- 1/2 cup chopped spinach
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package puff pastry (2 sheets)
- 1 egg (for egg wash)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix eggs, ricotta, Parmesan, spinach, salt, and pepper.
- Roll out puff pastry on a floured surface.
- Cut pastry into squares.
- Place a spoonful of the egg mixture in the center of each square.
- Fold the pastry over to form a triangle and seal the edges.
- Brush the tops with beaten egg.
- Bake for 20-25 minutes until golden brown.
